Capellini, with an evocative name and a very light consistency, have their origins disputed between the territories of Genoa, Neapolitan and Ciociaria. They are one of the thinnest shapes in long nest pasta.

Even the name of Capellini recalls the characteristic thinness of this format recommended in the diet of children aged 9 months and up, in order to accustom the little ones to grown-up foods.

The condiments recommended for this format are simple: the combinations with butter are excellent, such as raw butter and cheese or melted butter with sage and cheese. Egg-based sauces or fresh raw tomato sauces are also excellent. Another way to enjoy Capellini at its best is in a light white broth. In addition to broths and dry pastas, in the Neapolitan area they are also used for the preparation of baked pies.
